The Glion Institute of Higher Education presents their MOFs
Wassermann & Company cooperated with the renowned Glion Institute for catering at Baselworld 2019. Three excellent masters of the institute have developed the culinary concept of selected restaurants: Chantal Wittmann, Fabien Foare and Benoît Carcenat. Their handwriting is reflected in the concept and menu of two restaurants.
The Meilleur Ouvrier de France (MOF)
Chantal Wittmann, Fabien Foare and Benoît Carcenat have been teaching at the Glion Institute since 2017. They all bear the title Meilleur Ouvrier de France (MOF). This coveted award has been awarded every four years since 1924 by the French Ministry of Labor and the “Societé des Meilleurs Ouvries de France” in various craft sectors.
Chantal Wittmann
Gastronomic Restaurant Manager
Chantal Wittmann has over 30 years of experience in the practical teaching of service and fine dining. In 2011, she earned the title of MOF in Service, becoming only the second woman to win the competitive award. At Glion Institute of Higher Education, Chantal is in charge as Gastronomic Restaurant Manager and Senior Lecturer. She is head of the managing and teaching service at Le Bellevue, Glion’s fine-dining restaurant.

Fabien Foare
Fabien Foare is an accomplished chef with 15 years of experience in catering, restaurant operations and education. In 2011, he earned the title of Meilleur Ouvrier de France (MOF) in Catering. In 2016, Fabien joined the team at the Académie de Cuisine Benoît Violier, part of the Hôtel de Ville de Crissier, a triple-Michelin-starred restaurant in Switzerland considered one of the finest in the world.
Benoît Carcenat

Benoît Carcenat is an award-winning chef with nearly two decades of culinary experience. In 2015, he earned the title of Meilleur Ouvrier de France (MOF) in Cuisine. He spent nearly a decade as Chef Adjoint at the Hôtel de Ville de Crissier, a triple-Michelin-starred restaurant in Switzerland, considered one of the finest in the world. At Glion, he is in charge of the menu and concept behind Fresh, Glion’s restaurant dedicated to healthy, sustainable cuisine.
